Salmon Bites

by Chef Paul Watters

This dish requires a deep-frying technique. If you have a mini deep fryer great - if not, you can also use a medium sized pot with 5 cups of vegetable oil, brought to a medium to high heat approximately 170 degrees on the heat of the fryer.

Ingredients:

4 Salmon fillet (skinned and cut into cubes)
2 cups of self-rising flour
1 teaspoon of corn flour
3 eggs (beaten)
1 pint of milk (added to the eggs)
4 cups of breadcrumbs
1 ½ TB Mr. Frank’s Kitchen Tropical Sriracha Seasoning
Combine Mr. Frank’s Kitchen Tropical Sriracha Seasoning with the breadcrumbs and mix well.

The Stir Fry Vegetables:

3 carrots (peeled and rinsed then peeled again to form ribbons)
2 onions (peeled halved and Sliced)
1 green pepper (sliced)
1 red pepper (sliced)
1 bunch of Bok Choy (picked rinsed and sliced lengthways)
2 handful of Bean sprouts
4 baby corn (cut lengthways)
1 clove of garlic (grated)
1 knob of ginger Peeled and grated)
1 or half a red chili sliced (depending on choice of heat)
2 tablespoons of light soy sauce
2 tablespoons of water

The Sweet Chili Curry Sauce:

6 tablespoons of sweet chili sauce
2 tablespoons of Madras curry paste
Mix together well in a bowl and leave in a refrigerator before using.
1 handful of Thai basil picked (available in all good stores)

Directions:

  1. First off preheat the deep fryer or the pot to the heat required.
  2. Dip the salmon into the flour and coat. Then dip into the egg mix then the breadcrumbs and repeat once. Place onto a plate so that you are ready to cook them.
  3. Bring a wok or medium sized pan to the heat. The good thing about this dish is that you can cook two dishes at the same time.
  4. Add a drizzle of oil add the carrots, and cook for 2 mins
  5. Go back to the salmon bites and drop in the fryer or pot And cook for a few minutes until golden brown occasionally give a quick shake to help prevent sticking or do these four pieces at a time.
  6. Get back to the stir fry add the onion, baby corn and pepper cook for another 2 minutes.
  7. Add the garlic chili and ginger mix well. Add the soy sauce and water then this will gently stir fry as well as steam the veg.
  8. Check the Salmon bites and remove the first batch as it will be ready. Drain onto the plate with kitchen paper. Then add the second batch.
  9. Go back to the Stir fry then, add the beansprouts and mix well.
  10. The dish is ready to serve. Place the stir fried vegetables in the middle of the plate. Take the sauce out of the fridge and place dots around the plate with a tablespoon placing a salmon bite on each dot and sprinkle some
sesame seeds over the top along with the Thai basil a wedge of lime and serve and Enjoy.
